Inventing new ways to enjoy food.

The Kanazawa Institute of Food Tech & Art is a research hub dedicated to creating new value for food. 

 This site offers a place and opportunities for all those involved in food, be they professionals or amateurs, to explore different ideas.

 We are sharing different viewpoints and techniques around food as we open up the future of cuisine through practical work. We want to share the results of our research with the globe, contribute to the growth of Kanazawa’s food culture, and make this a jumping-off point for fostering new and richer food experiences around the world. 

Detailed activities

01. Recipe Archive

We strive to accumulate a body of meaningful data across areas like traditional cooking techniques, home recipes, and more, and open-source it for the betterment of our food culture.

02. Open-ended food research

We offer state-of-the-art cooking equipment and numerous ingredients and provide a climate supporting research across different fields. By sharing new techniques and recipes we develop with the world, we aim to contribute to growth of the food industry.

03. Creating more opportunities for everyone to enjoy food

We provide a wide range of opportunities for the general public to come in contact with the development process and the techniques and ways of thinking of food experts, and give chances to discover new values and enjoyment around food.

Facilities explained

Cooking space

This space is dedicated to specialized food research across all types of cuisine. The latest equipment, such as Josper charcoal ovens, Pacojet frozen food processors, and Gastrovac low pressure cookers is available.

Beverage laboratory

This space is dedicated to research into drinks and beverages. We have equipment such as centrifuges and low temperature distillers on hand.

Confectionery laboratory

This space is dedicated to research into confections and pastries. We are fully equipped with equipment like fermentation machines, flat ovens, and convection ovens.
We are actively looking for members interested in conducting food research with us. Membership gives you access to various R&D and insights on food, as well provides new ways to enjoy food. There is no fee for membership.

01. Learn how to use a variety of equipment

We hold training sessions on cooking equipment, from state-of-the-art tools used by professional chefs to implements used on a daily basis. Expand the breadth of your cooking and explore new joys in the culinary process.

02. Participation in various events and seminars

We regularly hold seminars with top chefs and producers from various regions, as well as events where you can find new value in food. Deepen your knowledge and way of thinking about cooking in a more delicious and enjoyable way.

03. Planning and development of new products

Even if your company does not have a test kitchen on premises, you can freely make use of our facilities. By sharing the recipes you develop, it can help drive the growth of the food industry.

04. Joint Food Research

Members can also conduct joint research and development together. In addition to the food domain, members can partner with people on other floors of the Kanazawa Mirai no Machi Creation Center to hold workshops, receive support, or create new business plans together.
